Musakhan

Taboon bread soaked in olive oil, piled with caramelised onions sharpened with sumac, and roasted chicken on top. It comes from the northern West Bank, around Tulkarm and Jenin, and it is eaten the proper way: with your hands, from one platter in the middle of the table.

When Palestinians want to explain their cuisine to a stranger, this is usually where they start.
