Maqluba

Maqluba means upside down. Rice, eggplant, and chicken or lamb are layered in a pot, cooked slowly, then flipped onto a tray at the table so the golden dome lands on top in front of everyone.

The flip is the moment the meal waits for. Families argue about whose version stands tallest.
