Knafeh nabulsih

White brined nabulsi cheese under a crust of shredded pastry, dyed orange, drenched in syrup, sold by the tray from shopfront pans in Nablus. You point at the corner piece you want and it is cut, boxed, and eaten within minutes.

In July 2009, Nablus bakers led by Muhanned al-Rabbe made a 74-metre tray weighing about 1,765 kg and took a Guinness world record. The city has not let anyone forget it.
